In contrast to intarsia the pieces are cut from a single slice of wood. The pieces are stained afterwards.

Im Gegensatz zu Intarsia werden bei der Segmentation die einzelnen Teile aus einem Stück Holz gesägt und anschließend eingefärbt.

We did this project as a segmentation several years ago. It uses food color and some white wood. But there is no reason you can't cut it as an intarsia.
